Spinach And Paneer Curry

Love sharing this recipe with you, because is one of my favourite Indian dishes! When I tried this recipe for the first time at All Indian Sweets restaurant in Vancouver ( their vegetarian all you can eat buffet is a MUST ) I knew I can switch to a meatless diet if I can eat this every day lol! I think the reason why I love it so much, is because of the paneer! You know I’m a cheese lover, so obviously, this is a win-win for me!

I found this recipe at delicious magazine, and love it because is FULL of VEGGIES and the taste is soo similar and the best part? all the ingredients, including the paneer, can be found at Superstore! ( make sure to look for the paneer at the regular cheese section! ).

 

Ingredients:

-1 1/2 tbsp ghee ( superstore in the organic section)

-1 chopped onion

-300g Spinach

-Teaspoon of coriander

-Teaspoon of ginger ( or 10g finely chopped )

-2 chopped garlic, cloves

-1 tbsp garam masala

-1/2 tbsp ground cumin

-300g paneer, cut into cubes

-3/4 tbsp natural greek yogurt

-Basmati rice, to serve

1- Heat the ghee in a frying pan over a low-medium heat. Add the onion and cook for 5-7 min. until soft and slightly golden. Blanch the spinach briefly in boiling water. Then drain. Put in a food processor with the coriander and pulse into a rough sauce.

2- Add the ginger and garlic to the onion and cook for 2-3 min until fragrant. Add the garam masala and cumin and cook for 1 min. stirring. Add the spinach mix and bubble for 10-12 min. Taste and season

3-Dry-Fry the paneer in a pan over medium heat for 30-60 sec until golden on both sides. Add the yogurt to the spinach mix and warm through, stirring. Season and serve with the paneer and basmati rice if you like.
