National Pie Day: Vegan Recipe NO BAKE!

You may think I forgot Meatless Monday but Noo I didn’t! The thing is, I was waiting for today so I can post this delicious Vegan Recipe from Minimalist Baker to celebrate National Pie day with you!!

This is my first time making a vegan pie, and I absolutely LOVE IT! It’s not too sweet and is over the top delicious, I garnished with walnuts for extra flavour!

The best thing about this pie? It’s SUPER healthy and Family friendly! Yass! Just one thing.. I was super busy this week that I have to confess something.. I bought the Crust already made! But you can make your own like this: 1 1/4 cups graham crackers crumbs, 1/4 vegan butter, melted ( My favorite brand is Earth Balance )


1- 1 cup raw cashews, soaked for 4-6 hours, then drained.

2- 3/4 of coconut milk

3-1/4 coconut oil, melted

4- 1/2 cup of lime juice ( I made it with around7 limes ) and 1 tbps zest

5-1/2 cup of Maple Syrup

Add the filling ingredients to a blender and blend on a high until creamy and smooth. Taste and adjust flavour as needed, adding more lime or agave.

Pour Filling into the crust and freeze for 2-4 hours or until firm. Remove from the freezer 10-15 min to thaw before serving. Will keep covered in the freezer for up to 2 weeks, though best when fresh.
